Crockpot Fajita Bowls: One of My Easiest Go-To Meals


One of the simplest recipes I make on repeat is my Crockpot Fajita Bowls. Whether I’m in the midst of a busy week, want to take a meal to someone, or want to make dinner for people coming over without spending hours in the kitchen, this dish is always a good go-to. It’s so easy to double or triple depending on how many people you’re feeding, and it’s packed with flavor.

I especially relied on this recipe during my early postpartum months when I needed something super quick and easy. Let me walk you through how I make it.


Ingredients: (makes about 5 servings)



  • 1 pound of beef shaved steak

  • 1 packet of fajita seasoning

  • 1 bag of frozen blend of bell peppers and onions

  • ¼ cup of water

  • 1 1/2 cups uncooked rice 

Instructions:

  1. Prep the Crockpot:



    • Lightly cut the shaved steak into smaller pieces (optional).

    • Place the beef, fajita seasoning, and the frozen bell peppers and onions in your crockpot. Add ¼ cup of water to help everything cook evenly.

    • Set your crockpot to high for about 3 hours or low for 6 hours.

  2. Cook the Rice:

    • Whenever you are close to ready to eat, prepare the rice. Combine the rice with 3 cups of water and cook according to the package instructions.

    • Pro Tip: This is a great opportunity to make extra rice to freeze away for future meals. Frozen rice is perfect for quick dinners like fried rice (if you also have frozen away some pieces of cooked or rotisserie chicken) or as a base for stuffed peppers.

  3. Assemble the Bowls:



    • Once the fajita meat is tender and flavorful, scoop the cooked rice into bowls and top it with the fajita mixture.

  4. Add Your Favorite Toppings:

    • Customize your bowl with your favorite toppings! Here are some ideas:

      • Avocado slices

      • Sour cream

      • Fresh cilantro

      • Shredded cheese

      • Salsa or hot sauce for an extra kick
